Gluten-free Sandwich Bread

Ingredients
  

  • 2 1/4 C. Warm Water
  • 3 T. Yeast
  • 1/4 C. Honey
  • 3 C. Brown Rice Flour
  • 1 1/2 C. Tapioca Flour
  • 4 tsp. xanthan gum
  • 2 1/2 tsp. Sea Salt
  • 4 T. Butter, melted
  • 3 Eggs large
  • 1 1/2 tsp. Apple Cider Vinegar

Instructions
 

  • Put warm water in a small bowl, mix in yeast and honey. Let sit for 10 to 15 min to activate yeast.
  • In another large mixing bowl, mix flours, xantham gum, salt. Mix.
  • Add rest of the ingredients including yeast mixture. Beat with an electric mixer.
  • Dough will be a thick pancake batter consistency. Divide into 2 greased bread loaf pans.
  • Cover with a damp cloth and let raise for 1 hour or double in size.
  • Bake for 40 mins at 400 degrees.
