Spinach Meatballs

Moist delicious Beef Meatballs with some added vegetable nutrition inside.

An easy way to chop spinach is to roll it into a tight ball burrito like shape. Roll all the leaves up tight and then starting from the end chop with a sharp knife.

Ok, so to mix all the ground beef and spinach, onions and everything the easiest way is to just get your hands into it. Its so hard to mix it up with a spoon. Wash your hands good, and just go to town mixing. Its quite therapeutic. It can get out a lot of aggression, pound and mix that meat!

After you have mixed all the ingredients, take a small amount and roll into a ball…I mean your hands are already covered….HAHA! Some people use an small cookie dough scoop though, just another option.

Bake at 350 degrees for 15 min. It really depends on how big or small you make your meatballs so keep an eye on them.

Ingredients
  

  • 2 lb Ground Beef lean
  • 1/2 Yellow Onion medium
  • 1 tsp. Sea Salt
  • 2 C. Fresh Spinach
  • 2 Eggs
  • 1/2 C. Fresh Cilantro
  • Black Pepper

Instructions
 

  • Put Ground beef into bowl, add salt and pepper and eggs
  • Chop Spinach, Onion and Cilantro, add into the bowl.
  • Mix thoroughly. Roll into balls. Place on a cookie sheet covered in tin foil.
  • Bake at 350 degrees for 15 min.
