A fluffy gluten-free, dairy-free, sugar-free Sandwich Bread that tastes great!
This dough is not like your typical dough. It ends up being like a thick pancake batter.
Just spread it out into your loaf pans. I use coconut oil on a paper towel to grease my pans. You can wet the back of a spoon with water and smooth out the dough if you want a prettier looking loaf.
Let it rise until its double in size. Yeah, sure this isn’t the prettiest looking bread but to have a gluten-free sandwich bread!! WAHOO! I will take not as pretty looking for taste any day!
Take out of the oven and out of the pans right away. I will run a knife around the edges so it doesn’t stick but usually it pops right out. This makes wonderful sandwich bread and tastes great!
Gluten-free Sandwich Bread
Ingredients
- 2 1/4 C. Warm Water
- 3 T. Yeast
- 1/4 C. Honey
- 3 C. Brown Rice Flour
- 1 1/2 C. Tapioca Flour
- 4 tsp. xanthan gum
- 2 1/2 tsp. Sea Salt
- 4 T. Butter, melted
- 3 Eggs large
- 1 1/2 tsp. Apple Cider Vinegar
Instructions
- Put warm water in a small bowl, mix in yeast and honey. Let sit for 10 to 15 min to activate yeast.
- In another large mixing bowl, mix flours, xantham gum, salt. Mix.
- Add rest of the ingredients including yeast mixture. Beat with an electric mixer.
- Dough will be a thick pancake batter consistency. Divide into 2 greased bread loaf pans.
- Cover with a damp cloth and let raise for 1 hour or double in size.
- Bake for 40 mins at 400 degrees.
