Grilled Tilapia Fish with Tangy Coleslaw, Cilantro wrapped in a Corn Tortilla
If you don’t want to go to the trouble of chopping up your own cabbage you can just buy a prepacked coleslaw. This one came with green cabbage and shredded carrots in a 14 oz package. 3 cups was about half the package so that worked out great and I had enough to make it twice.
I love to use Plain Greek Yogurt in place of sour cream most of the time… I mean, its not going to taste good on a baked potato, but if a recipe calls for it generally it is a healthy replacement. It works out quite well and is way more healthy for you in my opinion. If your mixed coleslaw looks a little dry, just add a little more yogurt.
I love lime juice so I just automatically put the juice of 2 limes in the slaw, but if you want you can just put in 1 lime and then cut the other one up and place wedges on the table so you can squeeze on more after you construct your taco yourself. That’s fun too!
This recipe of seasoning was just perfect for 4 fillets. If you want a little more spicy kick add 1/4 tsp. cayenne pepper. Then you can feel the heat. Remember to season both sides of your fillets.
I love to grill! Place the fillets on a grill mat. I LOVE THESE THINGS. You can take the map inside after and wash them in the sink and you don’t have to clean the grill. Happy Day! But if you don’t have a grill or its too cold outside, the only 2 acceptable reasons in my book not to grill…LOL, then you can cook them in a skillet on the stove top.
So if you don’t grill and you cook your fish in a skillet, go ahead and use the same pan to heat up your tortillas, adds more flavor. I have cooked my tortillas on my grill mat after I took off my fish but run the risk of your fish getting cold. Most of the time I do them in a skillet so I can get everything done at the same time.
Now its time to construct your fish taco. I use corn tortillas because I try to stay gluten-free but you can use any kind. Lay down a tortilla, put your fish in, top it with some yummy tangy coleslaw, an sprinkle with fresh chopped cilantro. Roll it up and ENJOY!
Fish Tacos
Ingredients
- 4 Fillets Tilapia
- 1/2 C. Cilantro chopped
- 1 T. Olive Oil Extra Virgin
Fish Seasoning
- 1 tsp. Garlic Powder
- 1/4 tsp. Cumin
- 1 tsp. Sea Salt
- 1/4 tsp. Black Pepper
- 1/2 tsp. Paprika
Cole Slaw
- 3 C. Chopped Cabbage Or packaged Cole Slaw
- 1/2 C. Plain Greek Yogurt
- 2 Juice of limes
- 1 tsp. Sea Salt
Instructions
- Place cabbage or Cole slaw in a bowl. Add yogurt, lime, and salt. Mix thoroughly and place in the fridge to chill.
- Mix up the fish seasoning. Lay the fish out on a cookie sheet and sprinkle both sides of the fish.
- Place fish on the hot grill and cook for 10 min. Turn over and grill the other side for approximately 10 min.
- Heat a skillet with a little Olive Oil. Brown the tortilla on both sides.
- Construct your taco with a little fish, some cole slaw and some chopped cilantro. Enjoy!
