A gluten-free, dairy-free, sugar-free delicious thin crepe.
You want them very thin, as thin as you can make them. I add a little coconut oil to the hot pan before I start. The edges will start to curl up when its time to flip.

Some of my favorite fillings is Strawberry Chia Seed Jam or the Blueberry Sauce.

I also love to put cut up fruit with a little maple syrup. Fresh peaches are one of my favorites!


Crepes
A gluten-free, dairy-free, sugar-free delicious thin crepe.
Ingredients
- 2 eggs Large
- 1 tsp. coconut oil melted
- 1 T. Water
- 1/4 C. arrowroot flour
- 1 tsp. coconut flour
- 1 pinch Sea Salt
- 1/2 tsp. Vanilla
Instructions
- Crack the eggs and whisk in the oil and the water and vanilla
- Add rest of ingredients and whisk well into a smooth batter.
- Pour in enough to barely cover the bottom of the pan. Roll batter around pan to form a thin layer. Edges will start to curl up.
- Flip over and cook other side. Fill with toppings, roll up and ENJOY!
