This is such a yummy topping for a boring piece of chicken. Its fresh and tasty. My favorite piece of chicken is a chicken thigh. Its just the right size for me and I don’t think it dries out as easily as the chicken breast. I know, I know, some people really believe that they light meat is healthier than the dark. Ummm, I’ll still take the dark. I’m still eating a boneless, skinless healthy piece chicken for heaven’s sake.
Do you love Cilantro as much as I do! I love it! It adds so much flavor and you are adding a leafy green…yes please! I strip the leaves off my cilantro and kind of pull out all the stems. Then I roll all the leaves up into a burrito type shape. Then you just chop down the end, You can chop more if needed. As you can see in the picture, I don’t really worry if there are big pieces of cilantro in there. SOOOO YUMMY!
Chicken with Mango Avocado Salsa
Ingredients
- 2 Chicken Thighs or your favorite piece of chicken
- 1 Clove Garlic
- 1 T. Butter
For the Salsa
- 1 Mango Diced
- 1 Avocado Diced
- 1 Tomato Large, Diced
- 1/4 C. Cilantro Fresh, Chopped
- 1 Juice of Lime
- Sea Salt To taste
Instructions
For the Chicken
- In a skillet, Mince clove of Garlic and put in the butter (Olive Oil may be substituted for Butter) Saute for a minute then add your chicken
- Cook Chicken on Medium Heat. Brown on one side, then turn over and brown the other side.
For the Salsa
- Dice the Mango, Avocado, and tomato and put into a bowl.
- Chop the cilantro and add to the bowl.
- Juice 1 lime and pour over into the contents of the bowl
- Mix thoroughly, Add Salt to taste. Stir again until evenly coated.
- Spread out on the chicken and enjoy!
