A wonderful dip for Tortilla Chips, or a topping for taco or quesadillas!
This platter right here is what we had for dinner…HAHA! I love this salsa dip. Just chop, dice, mince and stir and serve! So quick and easy and healthy! I mean look how many vegetables are in this and black beans are so good for you!
The fiber, antioxidants, protein, and carbohydrates in black beans make them nutritionally powerful. Some of the health benefits are healthy bones, preventing cancer, healthy digestion, and helps with weight loss. I actually buy raw black beans and just cook them in my pressure cooker, I just feel like they are fresher and possibly have more nutrients left in them. I don’t know if that true but ya know…whatever makes you feel good. LOL! It really is easy, but canned black beans works too.
Black Bean Salsa
Ingredients
- 2 Avocados, Diced Ripe
- 2 med Tomatoes, Diced
- 1 Can Whole Corn, Drained
- 1 Can Black Beans, Drained and Rinsed OR 2 C. cooked black beans
- 1 Juice of a Lime
- 1/2 C. Yellow Onion, Chopped
- 1 Clove Garlic, Minced
- 1/2 C. Cilantro, Chopped
- 1/2 tsp. Sea Salt, Or to taste
Instructions
- Dice Avocado and tomatoes into small pieces.
- Put in all the ingredients and carefully stir together.
- Serve with Tortilla chips to dip with. Can be used as a salsa for tacos or quesadillas. Enjoy!
