This is a yummy, creamy, chocolatey recipe that is Dairy-free, Sugar-free, Gluten-free.
Here is a tip! I don’t like to wash my food processor. So the first thing I do is put on my shedder attachment and shred my zucchini. Then I take it out and begin with the crust! There is something about shredding zucchini in a chocolate covered, dirty food processor. It wouldn’t matter, but I can’t do it…LOL. So I do that first. Then I make my crust. This crust is so yummy, and you can use it for lots of other recipes as a crust. Keep that in mind for the future.
Next is the filling. I love that you don’t have to soak the cashews first because usually when I decide to make it, I want to make it now and I don’t often plan that far ahead.
So now we throw it in the freezer. It usually take a good 4 hours to set hard. So what I do at this point is I cut the whole thing into 1 inch by 1 inch squares and take them all out of the pan and put them into a tupperware or into a ziplock freezer bag. Now I have a quick snack to grab out anytime I need one or when I need a chocolate fix. It really does help to have a yummy chocolatey HEALTHY snack on hand and readily available whenever you need one!

No Guilt Chocolate Cheesecake

- Food Processor
Ingredients
For Crust
- 2 C. Pecans Raw not roasted
- 2 T. Coconut Oil Melted
- 1/4 C. `Maple Syrup Pure
- 1/4 C. Cocoa Powder
For Filling
- 1/4 tsp. Sea Salt
- 1 C. Shredded Zucchini
- 2 C. Raw Cashews no soaking necessary
- 1/2 C. Maple Syrup Pure
- 1/2 C. Cocoa Powder
- 1/4 C. Coconut Oil Melted
- 1 T. Vanilla Pure
- 1/2 tsp. Sea Salt
Instructions
For Crust
- Put Pecans in food processor and grind into a meal.
- Add rest of ingredients for Crust and press into a 9X9 pan or 9" glass pie dish.
For Filling
- Put Shredded Attachment on food processor and shred Zucchini. Take out and measure out 1 C. tightly pressed down into measuring cup.
- Put in cashews and mix until chopped until fine.
- Add rest if ingredients and mix until smooth.
- Spread onto crust and put into freezer. Keep Frozen and ENJOY!
