C.A.T. Salad

Fresh Cucumber, Avocado and Tomato Salad with a lemony dressing.

Chop your tomatoes and your cucumber. I don’t peel my cucumber first because you get so many nutrients from that dark green skin. So good for you! Next chop up your red onion. Red onion are sweeter and delicious.

Next, chop up your avocado. Do you know that the number one kitchen accident happens cutting up an avocado. I heard that somewhere…HAHA I don’t know if that’s true but just be careful. Make sure its a ripe avocado. So squeeze it, it should be soft, not hard.

Someday I should really chop up 1/2 bunch of cilantro and measure it out to see how much it really is. But you know, can you add to much cilantro. Cilantro adds so much flavor and perfect for this type of salad.

I usually make this about 30 minutes before we eat and put into the fridge. I love a chilled summer fresh salad. So good with a grilled meat or any main dish!

A Cucumber Avocado Tomato Salad with a lemony dressing.

Ingredients
  

  • 1 Cucumber
  • 1 lb. Roma Tomatoes
  • 2 Avocados
  • 1/2 Red Onion Medium
  • 1/2 Bunch Cilantro Chopped

Dressing

  • 2 T. Lemon Juice Freshly Squeezed
  • 2 T. Sesame seed Oil
  • Sea Salt
  • Ground Pepper

Instructions
 

  • Wash Cucumber, Avocado and Tomato. Chop and put into a bowl.
  • Fresh squeeze lemon and whisk into the oil.
  • When ready to serve, poor dressing over the salad, toss. Add Salt and Pepper to taste. Enjoy!
